Flourless Blueberry Muffins

Flourless, Gluten Free, AIP approved


1 cup fresh blueberries
2 Eggs
2 tbsp. Honey
1/2 tsp. baking soda
1 cup almond butter
1 tsp. vanilla extract
1 tsp. apple cider vinegar
1 scoop Iso Pure Vanilla protein powder


Preheat oven to 375 degrees F.
Place all ingredients, except blueberries, into a blender or food processor. Blend until well mixed.
Pour batter into greased muffin tin. Add the blueberries as toppings to each muffin and lightly stir into each cup. Feel free to add additional toppings!
Cook time: 15 minutes for full size muffins
Reheat in a toaster oven for about 4 minutes at 350 degrees or at room temperature
